Fish Tacos Origin & History
According to numerous sources, fish tacos (Tacos de pescado) originated from the Pacific coast of Baja California. They were popularized by Ralph Rubio in the early 1980's beginning in San Diego. The original style came with a big piece of fish typically Cod. Mr. Rubio said that he came into contact with the dish while on holiday in San Felipe. In later years. the newer recipe consists of grilled fish in smaller portions. The tortilla is made normally of corn or wheat.
